STEP 1: ICE CUPCAKES AND DIP IN SUGAR
Tint the buttercream light yellow with a touch of food coloring. Mound icing on each cupcake and smooth a best possible with a spatula. Place them in the fridge until the buttercream is firm.
Dump the sugar into a bowl and dip the chilled cupcakes in the sugar, rolling them around as necessary to cover the entire tops.
STEP 2: PIPE CHEEKS, ADD EYES, NOSE AND EARS
Place some additional buttercream in a piping bag fitted with a #10 tip. Pipe two round balls for the bunny cheeks. Then, dip your finger in water and gently tap down any peaks in the icing.
Place a red candy for the nose and two black pearls for the eyes.
Cut the gum pieces into smaller squares with a craft blade or paring knife to create the teeth and insert into the cheeks.
STEP 3: ADD FOAM EARS
Bend and tweak the foam bunny ears and insert into the large cupcakes.
For the mini cupcakes, use scissors to cut-out two small ears from one large foam ear. Bend and insert.
