A perfect way to celebrate spring, this modern take on bunny cookies is made easy with a fool proof sugar cookie recipe, textured mat and glittery edible paint. To make the best texture, lightly spray the impression mat with baking spray, wipe away the excess and then lay the coated side down on your rolled fondant. Use a rolling pin to roll over the mat and then lift to reveal the embossing.

STEP 1: ROLL AND BAKE COOKIES


Prepare the bunny cookies per the Ultimate Sugar Cookie Recipe  using the bunny cookie cutters.



STEP 2: CREATE TEXTURE ON FONDANT


Roll out desired color of fondant approximately 1/8" thick. Lightly coat one side of the impression mat with non-stick baking spray and use a paper towel to wipe off the excess. Place the mat on the fondant, coated side down, and use a rolling pin to roll over the mat to make an imprint. Gently remove the mat. Use a cookie cutter to cut out a bunny shape. Lightly brush a sugar cookie with water and place the fondant shape on top, positioning as necessary. Repeat with remaining colors of fondant, patterns and cookie shapes.



STEP 3: PAINT WITH LUSTER DUST


Mix a small amount of luster dust with a few drops of vodka or clear extract until the consistency is paintable but not too runny (similar to the consistency of heavy cream). Paint the raised area of each pattern.
