STEP 1: ROLL, CUT AND STAMP COOKIES
Prepare our Ultimate Cookie Dough recipe according to the directions. (You can definitely do this days ahead.)
When ready, pull the dough out of the fridge and let it soften a bit before rolling it out, about 15 minutes or so. Work with half the dough at a time to make it easier.
On a surface dusted with flour, roll the cookie dough 1/8 - 1/4" thick. Use a 1 1/2" wide ruler to cut the dough into vertical strips. We just held the ruler in place on the dough and used a butter knife to make the cuts.
Repeat the process again, making horizontal cuts to create your tiles.
Lift and separate the tiles to make sure they're not stuck together. Then, use the mini cutters to make a stamped impression in each cookie. Be sure to press enough to make the letter but not cut through the dough.
Place on a parchment covered tray and chill for 15 minutes in the fridge. Bake for 10-12 minutes at 350° or until lightly browned on the edges.
STEP 2: PAINT AND FINISH TILES
Thin some black paste food coloring with a few drops of clear extract or vodka. Test the color on the back of a cookie to make sure it's a good consitency.
Use a small brush to fill in the letter impression in black.
Once finished, use a food coloring marker to make the tiny number on the cookie. Voila! You're done.
