Dotty Blue Bird's Nest Cake

Serves 10-12

This cute little nest cake is adorable for any baby shower. Crunchy chow mein noodles and white chocolate make for a super easy nest and a the little hand sculpted bird adds a special touch.

In two separate bowls, melt the white and yellow coating in the microwave in 30 second intervals, stirring in between. Remove when 3/4 melted and continue to stir until completely melted. Dip a toothpick in the white coating and make polka dots on the inside of the egg mold. Place in the fridge for 5 minutes to harden. Remove and fill the egg mold with yellow coating. Tap the mold firmly on the counter to remove any air bubbles and place in the fridge until firm, 15 minutes or so. Flip the egg out of the mold, let it come to room temperature and attach the two sides together with additional melted coating. Use some additional coating to fill in the letters for the word "Baby"in the alphabet chocolate mold. Place in the FREEZER until firm and flip out to release. (Note: Sometimes I use an x-acto knife or paring knife to trim any overhang on the letters when they are finished. It's hard to make them perfect otherwise)

Tint half of the white fondant with sky with food coloring. Wrap in plastic and set aside. Next, place a few handfuls of chow mein noodles in a bowl and mix in enough melted white coating to thoroughly coat. Place the mixture on a parchment covered tray and form with your hands to make a nest. Make an indentation in the middle and place the egg inside. Place in the fridge to harden.

To make the bird, use a handful of white fondant to form a bird body. Set aside to dry. Pinch off two very small pieces of blue fondant and create two little wings and attach to the bird body with a little water.

Ice the cake in buttercream and roll in fondant. Roll white fondant and cut the polka dots. Apply the dots with a light coating of water. Attach the "Baby" letters with a little additional coating. Place the nest on top and attach with some additional melted coating. Add some coating to the bottom of the bird and place it on the edge of the nest. Drive a skewer thru the bird and all the way through the cake to secure.
