STEP 1: MAKE THE NESTS
Melt the blue coating discs in the microwave in 30 second intervals, stirring in between. Once it's 3/4 melted, remove and stir until completely melted. Fill the small egg mold and tap firmly on the counter to remove any air bubbles. Place in the fridge for 5 minutes or so until firm. Flip the eggs out, let them come to room temperature and then adhere them together using additional melted chocolate. Next, melt the white coating, and place the some crunchy chow mein noodles in a bowl. Toss them with the enough white coating to coat thoroughly and then scoop spoonfuls of the mixture onto a parchment covered tray to make the nests. Make an indentation with your finger and place an egg inside, readjusting the nest as necessary. Place in the fridge briefly to harden.
STEP 2: CUT OUT AND DECORATE THE BIRDS
Roll the white fondant as thinly as possible and use the cutter to cut a robin for each cupcake. Once dry to the touch, use the blue food coloring marker to draw polka dots on the birds. Leave these to dry as long as possible, preferably overnight. Use some additional melted coating to attach each bird to a nest, holding in place as the coating dries.
STEP 3: BAKE AND ASSEMBLE CUPCAKES
Bake the cupcakes, let cool and cover with icing. Place a finished nest on each.
