This icing is simple to make and packs a peanut butter punch. Use it for a cookie filling, cupcake frosting or slather it in between cake layers for a salty, sweet treat.


6 tbsp unsalted butter, softened ( 85g)

1 1/2 cups creamy peanut butter ( 390g)

1 cup powdered sugar ( 170g)

1/2 tsp. salt


Place all the ingredients in the bowl of a stand mixer fitted with the paddle attachment. Mix on low speed until combined.

Switch mixer to high speed and beat until fluffy.
