Start by tinting your cake pop filling with a few drops of pink gel paste. We left it marbleized to look more like "brains" but you can just as easily mix it thoroughly until it's a completely light pink color.

Next, place a small amount of candy coating in a microwave safe bowl. Heat it on half power for 30 seconds, remove and stir. Continue in 30 second increments, stirring in between, until the coating is melted. (Do not overheat the coating because it could burn).

Use a paintbrush to paint and dab the inside of each brain mold cavity to create a 1/8" thick shell. Place it in the fridge for 5 minutes to harden. Remove and hold the mold up to the light to see if there are any weak spots and dab more coating to strengthen those spots.

Next, place a heaping teaspoon of strawberry jam in each cavity and then press in some cake pop filling on top, making sure not to let the jam squeeze out around the sides of the filling. Do not overfill the cavites, but instead leave a gap so that you can seal them with more coating.

Reheat the coating as necessary and spread some on the top of each cavity, making sure to meet the edges in order to create a good seal. Place the mold in the freezer for 15 minutes to completely harden.

Pop the brains out of the mold and let them sit at room temperature for a bit until any condensation has evaporated before continuing on to the next step.

Place some piping gel in a cup and stir in a tiny drop of pink gel paste to darken (it will only need a small drop to tint)

Use a paintbrush to paint a thin coating of piping gel on top of the brain and then go back with a paper towel and wipe off some of the excess so that the dark piping gel goes in the cracks of the brain. Serve the brains as treat on there own or place on top of cupcakes for even more pizazz.
