X and O Chocolate Peanut Butter Sandwich Cookies
STEP 1) ROLL, CUT AND BAKE COOKIES
Prepare the chocolate cookie dough per the recipe and instructions on the Basics Page (https://thecakegirls.com/basics/chocolate-cookie-dough). Preheat the oven to 350 degrees. On a lightly floured surface, roll the chocolate dough 1/8" thick. Use the X and O cutters to cut out cookies and place on a parchment lined tray. Refrigerate the cookies for 15 minutes. Bake for 8-10 minutes or until edges are slightly brown and crisp. Let cool completely. Repeat with remaining dough.
STEP 2) PIPE DOTS
On a stand mixer fitted with the paddle attachment, prepare the royal icing per the bag instructions. Add a little additional water if necessary until you have a soft pipeable consistency. Tint half of the icing pink and place in a piping bag. Fill an additional piping bag with white icing. Pipe dots on X's and O's.
STEP 3) MAKE FILLING AND FILL COOKIES
Prepare the Peanut Butter Icing per the Basics page recipe (https://thecakegirls.com/basics/peanut-butter-icing). Place the icing in a piping bag and pipe filling on 1/2 of the cookies. Top with remaining cookies.
