Crumb Topping
In a medium bowl, mix the granulated sugar, brown sugar, ground cinnamon, and a pinch of salt. Then, pour in the unsalted butter and give it a good stir. Lightly whisk in the all-purpose flour (don't overmix) until crumbly.
Cake Batter
In another bowl, whisk together flour, baking powder, baking soda, and a bit more salt. Set that aside.
Cream the unsalted butter and white sugar with your hand or electric mixer until smooth and creamy (around 2 minutes, high speed). Toss in the large eggs, a splash of vanilla, and sour cream. Keep mixing until it's all well combined.
With your mixer running low speed, gradually add those dry ingredients (from Step 3) to the wet ingredients (Step 4). Mix (but don't go overboard) until you have a thick batter. Toss your apple chunks into a sprinkle of cinnamon to use later.
Assembly & Baking
Spread your batter evenly into your baking pan, then neatly layer the spiced apples (from Step 5) across the top.
Sprinkle on our crumbly topping. Grab a spoon or a rubber spatula and gently press down on the topping so it will stick.
Let it bake for 45 to 55 minutes (give or take, depending on your oven). You'll know it's done when you stick a small toothpick into the middle, and it comes out nicely clean. Cover the cake loosely with foil if the edges or top get too brown.
Get the cake out and let it cool on a wire rack for 30 to 45 minutes (or even longer if you can wait).
Drizzle on some icing (optional). Enjoy your apple cake with crumble!
- Slice your apples thinly and evenly (about ¼ inch thick) to ensure they cook through at the same rate as the cake. Thick slices may result in a raw center.
- To prevent your apples from browning, toss them with lemon juice or a sprinkle of ascorbic acid while you prepare the rest of the recipe.
