The spooky season rolls around. Got any plans for a Halloween party yet? If not, you’re in luck, my friends! Last Sunday, I whipped up a batch of mini mice cakes with my lil’ daughter. Guess what? Those little cakes look as appealing as they are scrumptious. I mean, who says rats have to be disgusting, right? Let’s see how I turn them into stunning Halloween treats!
Why These Mini Mice Cakes Are An Absolute Hit
Their striking contrast makes them a show-stopper. Think mice are usually repulsive, dirty, and pesky? Not with these mini mice cakes! They are dressed in a pure white candy coating, accented with vibrant red eyes and noses. This creates a contrasting appeal that is calling all the guests. Don’t you dare look into their fiery eyes—they are just waiting to bewitch you!
An indulgent treat is waiting to be revealed. Halloween treats aren’t always about looking creepy. Once you crack open the sweet candy coating, you’re in for another surprise: a rich, creamy red velvet heaven. Its sweetness, paired with a chocolatey and tangy note, makes for the perfect ending to the Halloween party.
It’s a fool-proof recipe. This recipe takes me no more than an hour to make. Even my daughter can craft a spooky mouse herself, so I see no reason why a beginner baker can’t make these fancy desserts. We only need about 5 ingredients, and all are incredibly easy to find.

7 Steps To Make Mini Mice Cakes
Step 1
Let’s start with the coating! Grab a heat-proof, clean bowl or cup and toss about 12 ounces of white candy coating into it.
IMPORTANT: Set the microwave to 50% of its power and give the mixture a good stir every 30 seconds until it melts completely. Don’t go overboard with your microwave! On my first try, I turned the microwave to 70%. The result? The coating got burned and went to waste.
Keep a sharp eye on the bowl and pop it out once it melts.
Step 2
Prepare a mouse mold of any shape you like. I want bite-sized treats that everyone can take home, so I stick to this small mold.
Now, scoop a teaspoon or so of the melted white coating into each cavity in the mold. Grab a paintbrush to dab and spread the mixture evenly so that it covers every nook and cranny. We don’t want to miss out on any little details, but leave out the tail (I’ll explain later)! We aim at a shell about ⅛ inches thick with well-defined details.
Let the coat harden and touch up any thin spots to ensure the shell is solid enough to hold the cake filling. If you are short of time, place the mold in the refrigerator for around 5 minutes to settle.
Step 3
Have all the shells hardened? Great! It’s time for the filling. Scoop about a tablespoon of red velvet cake pop filling and gently spoon it into each shell. I know we all love that satisfying texture, but don’t stuff each cavity with too much filling. We need some room to seal the shell.
Step 4
Add extra white coating on the back of each mouse to seal all the remaining gape. Use a brush to smooth it out, as we want a sturdy, even bottom to help it stay put on the party table.
Stash the mold in the freezer for around 10 minutes to firm up.
Step 5
Remove the mold from the freezer and gently release the mice from it. Be careful not to damage any details! Place them on a chopping board or any cutting surface and let them cool to room temperature.
Use a paring knife or a craft knife to trim off any excess coating, especially around the edges. We all love realistic, well-defined mice cakes, right?
My mischievous girl even carved a sinister grin on each mouse. Not a bad idea at all! This adds a bold and creepy touch to their otherwise cute look. Just let your inner artist run free! But be as gentle as possible so you don’t break the fragile shell!
Step 6
Have some colorful confetti sprinkles on hand? Good! It’s time to add a bit more flair and bring the mice to life. But first, pick out all the red confetti for striking red eyes and noses. My daughter helped me with this—quality family time, you know!
Use a toothpick to add a dab of coating on each eye and nose and attach a red confetti piece. Now, these pesky mice are ready to throw a fiery gaze at your guests!
Step 7
Pinch off a little white fondant about the size of a pea. Roll it into a thin rope and taper it at one end. Cut the other end blunt so it can easily stick to the back of the mouse. Continue doing this to get enough tails for all the mice.
Dip the blunt end of the tail in some melted coating and then attach it to the back of each mouse. Now, shape the tails in different curls to make them look more life-like.
Once the tails harden, your mini mice cakes are ready to serve!

Recipe Notes
- Craft the tails separately. I tried to fill the tail parts of the mold with white coating, but when I popped them out, most of them broke off. So, I decided to make the tails with fondant for a more sturdy frame while also adding a delightful, sweet crunch to the party.
- If you plan to whip up these cakes many days ahead, store them away from direct sunlight or other heat sources. You don’t want those creepy mice to end up looking melted or unsightly when the guests arrive.
- On the day of the party, I recommend you scatter those pesky mice randomly all over the table to create a spooky mess. Set up some cool-toned lighting and watch the eerie mice seem to play hide and seek in the faint, haunting glow. It feels like their hostile eyes are staring at you from somewhere, sending chills down your spine.
